How to Make Fried Rice at Home
Published 2026-10-29
Fried rice is one of the best ways to use leftover rice, and it can taste just like takeout with a hot pan and a few basic ingredients. The secret is cold, cooked rice, which has dried slightly in the fridge and fries into separate grains instead of turning mushy. You can make a simple egg fried rice or add chicken, shrimp, pork or vegetables for a complete dinner.
Start with the right rice
Long grain white rice and jasmine rice are the most common choices. Cook it a day ahead, spread it out to cool, then refrigerate in a covered container. If you need to use fresh rice, spread it on a tray and let it steam off and cool for a while first. Roughly one cup of uncooked rice makes about three cups of cooked rice, enough for two to three servings of fried rice.
Basic method
Heat a wok or large skillet over high heat with a little neutral oil. Scramble two or three eggs, remove them, then add diced onion, garlic and frozen peas and carrots. Add the cold rice and press it against the hot pan, tossing every so often so it toasts. Season with soy sauce a little at a time, return the eggs, and finish with sliced green onion and a few drops of sesame oil if you like.
Protein and flavor ideas
Add diced cooked chicken, small shrimp, ham, leftover pork or even browned SPAM. Canned pineapple chunks make a sweet and savory version. A spoonful of oyster sauce, a pinch of white pepper or a little chili crisp adds depth. For a vegetarian version, use extra eggs, tofu, corn and mushrooms.
Mistakes to avoid
Do not overcrowd the pan; cook in batches if you are making a big amount. Avoid adding too much soy sauce at once, which makes the rice soggy and salty. Keep the heat high so the rice fries instead of steaming. Refrigerate leftovers promptly and reheat until steaming hot.
