How to Make Boxed Mac and Cheese Better
Published 2026-10-29
Boxed mac and cheese is a lifesaver on busy nights, and a few small changes can make it taste closer to homemade. Most upgrades take only pantry and fridge staples. Some make the sauce creamier, some add flavor, and others turn a side dish into a full dinner. These tips work for powder-style boxes as well as boxes with a liquid cheese sauce pouch.
Make the sauce creamier
Cook the pasta just until tender and do not rinse it, so the sauce clings. Use whole milk, a splash of cream or evaporated milk instead of low-fat milk, and add the butter while the pasta is still hot. A spoonful of cream cheese or sour cream stirred in at the end makes the sauce silky. A handful of shredded cheddar, Colby jack or a slice of American cheese melts easily and boosts the cheese flavor.
Add flavor
A small squeeze of yellow mustard or a pinch of dry mustard brings out the cheese flavor without tasting like mustard. Garlic powder, onion powder, smoked paprika and black pepper are easy additions. For heat, try hot sauce, crushed red pepper or a spoonful of diced tomatoes with green chilies. A little grated parmesan on top adds a salty, nutty finish.
Turn it into a meal
Stir in cooked ground beef, sliced hot dogs, diced ham, canned or rotisserie chicken, crumbled bacon or canned tuna. Frozen peas, broccoli florets and corn can be cooked with the pasta during the last few minutes. Mixing in some cooked broccoli and chicken is a simple way to make a balanced one-pot dinner.
Crispy topping
For a baked finish, spoon the prepared mac and cheese into a small baking dish, top with buttered breadcrumbs or crushed crackers and more cheese, and bake until golden and bubbling. Crushed cheese crackers or potato chips make a crunchy, kid-friendly topping. Let it rest a few minutes before serving.
