Rotel comes in several versions, from mild to original to hot, plus flavors such as lime and cilantro or fire roasted. Mild is the safest choice for kids and crowds who do not like spice; original has a gentle kick. The standard can is 10 ounces, which is smaller than a typical 14.5 ounce can of diced tomatoes, so recipes written for Rotel usually call for that size. Classic Rotel queso dip
Cut a block of processed cheese, such as a 16 ounce loaf, into cubes and melt it in a pot over low heat or in a slow cooker with one can of Rotel, juice and all. Stir until smooth.
