Pumpkin Pie Ingredients and Tips
Published 2026-10-31
Pumpkin pie is a holiday must for many families, and the ingredient list is short. Still, a few details, like which canned milk to use, decide whether the filling sets smoothly. This guide lists what you need and the most common mistakes, so your pie turns out creamy and evenly baked.
The basic ingredients
A classic pumpkin pie filling uses canned pure pumpkin, eggs, sugar, spices and either evaporated milk or sweetened condensed milk. You will also need a pie crust, homemade with flour and shortening or butter, or ready-made. Make sure you buy pure pumpkin, not pumpkin pie filling, unless your recipe calls for the pre-spiced version.
Which milk to use
The famous Libby's recipe uses evaporated milk plus sugar. Other recipes use sweetened condensed milk and skip the separate sugar. Both are delicious but are written differently. Mixing them up is the most common pumpkin pie mistake, so read your recipe carefully before shopping.
Spices and flavor
Cinnamon, ginger, nutmeg and cloves are the classic spices, or use a pumpkin pie spice blend. A teaspoon of pure vanilla extract and a pinch of salt round out the flavor. Some bakers add a little brown sugar for a deeper, caramel note.
Baking without cracks
Bake until the edges are set and the center still jiggles slightly; it will finish setting as it cools. Overbaking causes cracks and a weepy filling. Cool the pie gradually on a rack and refrigerate once cool. Shielding the crust edges with foil prevents over-browning. Pumpkin pie is best made a day ahead, which also frees up the oven.
Make-ahead and storage
Pumpkin pie is a custard pie, so once it has cooled to room temperature it should be covered and stored in the refrigerator. It keeps well for a few days. You can bake it a day or two before the holiday, which frees up oven space on the big day. Serve it chilled or let slices sit out briefly, and add whipped cream just before serving so it does not weep.
