Keto Baking Pantry Staples

Published 2026-10-31

Following a keto or low-carb eating plan does not mean giving up homemade treats. With a few key pantry staples, you can bake cookies, brownies, muffins and cakes that fit your goals. This list covers the basics and how each one is used, so you can stock up once and bake whenever a craving hits.

Low-carb flours

Super-fine almond flour is the foundation of most keto baking. It is rich, moist and naturally low in carbohydrates compared with wheat flour. Coconut flour is another option but absorbs much more liquid, so use recipes written for it. Store nut flours in the fridge or freezer to keep them fresh.

Sugar substitutes

Granulated sweeteners such as Swerve are made from erythritol and are designed to measure like sugar in many recipes. Stevia and monk fruit blends are also popular. Each one tastes and browns slightly differently, so start with recipes developed for the sweetener you have. Large amounts of sugar alcohols can upset some stomachs.

Chocolate and mixes

No sugar added chocolate chips sweetened with stevia let you make keto chocolate chip cookies and brownies. Keto-friendly cake mixes, such as a zero sugar added yellow cake mix, are convenient for birthdays and quick desserts. Check labels for net carbs and serving sizes, since they vary by product.

Supporting ingredients

Baking powder, pure vanilla extract and unsweetened cocoa powder are naturally low in carbohydrates and used in many keto recipes. Eggs and butter provide structure and richness. Keep a simple notebook of the bake times and swaps that work in your oven; low-carb baked goods often brown faster, so lower the temperature slightly if edges darken early.

Budget tips

Specialty low-carb ingredients cost more than regular flour and sugar, so buy only what you will use within a couple of months. Start with almond flour, one sweetener you like and a bag of no sugar added chips, then expand once you find recipes you enjoy. Storing nut flour in the freezer keeps it fresh, and comparing price per ounce helps you choose the best bag size.
