How to Bake With Sugar Substitutes

Published 2026-10-31

Sugar does more than sweeten. It keeps cakes moist, helps cookies spread and brown, and feeds yeast. When you replace it with a zero-calorie sweetener, those jobs change too. These tips help you understand popular sugar substitutes and get better results from your first batch.

Erythritol blends

Sweeteners such as Swerve are based on erythritol and are made to measure like sugar in many recipes, according to their labels. They bake and brown reasonably well and come in granular, confectioners and brown sugar styles. Some people notice a cooling sensation on the tongue; mixing with a little stevia or monk fruit can soften it.

Stevia and monk fruit

Pure stevia and monk fruit extracts are many times sweeter than sugar, so they are usually sold blended with a bulking ingredient for baking. Baking blends, such as a stevia baker's bag, are designed for easier measuring. Follow the conversion on the package, because blends differ.

What changes in the oven

Without sugar, cookies may spread less and stay paler, and cakes can be a little drier. Adding an extra egg yolk, a spoonful of sour cream or Greek yogurt, or a bit more fat helps moisture. Watch the oven closely and use color less as a guide; check doneness with a toothpick. Yeast breads still need a little real sugar or honey to feed the yeast.

Best recipes to start with

Brownies, muffins, cheesecake, pudding and frostings are forgiving starting points. Pair a sugar substitute with almond flour and no sugar added chocolate chips for low-sugar chocolate chip cookies. Keep in mind that large servings of sugar alcohols can cause digestive discomfort for some people.

Powdered and brown sugar swaps

If a recipe calls for powdered sugar in frosting or glaze, use a confectioners style sugar substitute, or blend a granulated one in a clean blender until fine. For brown sugar flavor, there are brown sugar style replacements, or you can add a small amount of molasses to a granular sweetener. Taste frostings as you go, since sweetness levels differ between products.
