Yellow Mustard vs Dijon Mustard

Published 2026-10-30

Mustard is one of the oldest condiments around, and the two jars most American kitchens keep are classic yellow mustard and Dijon. They look different, taste different and work best in different dishes. Knowing which one to reach for makes a noticeable difference in sandwiches, salad dressings and sauces, so here is a simple breakdown of how they compare and when one can stand in for the other.

Classic yellow mustard

Yellow mustard is made from ground yellow mustard seed, vinegar and spices, and its bright color comes from turmeric. It is mild, tangy and only slightly spicy. That gentle flavor is why it is the go-to for hot dogs, burgers, ballpark pretzels, potato salad and deviled eggs. Big containers make sense for cookouts, food stands and families that use it daily.

Dijon mustard

Dijon is made with brown or black mustard seeds and white wine or wine vinegar, which gives it a sharper, more pungent heat that you can feel in your nose. It is smooth, pale yellow-brown and less vinegary than yellow mustard. Dijon shines in vinaigrettes, where it also helps oil and vinegar blend together, and in pan sauces, glazes for salmon or pork and grown-up sandwiches.

Can you swap them?

In a pinch, yes, but adjust the amount. Use a little less Dijon when a recipe calls for yellow mustard, since Dijon is stronger. Going the other way, yellow mustard can replace Dijon in a dressing or marinade, but the result will taste milder and more vinegary. For deviled eggs and potato salad, many cooks use a mix of both for tang plus a little heat.

Storing mustard

Mustard is naturally acidic, so it keeps well. Unopened jars are fine in the pantry. After opening, follow the label, which typically recommends refrigerating for best flavor and color. Over time mustard can lose some of its punch, so choose a jar size you will use within a few months, or buy a large container only if you go through it quickly.
