Pancake Syrup vs Maple Syrup

Published 2026-10-27

The bottle you pour over pancakes can be one of two very different products. Pure maple syrup is made by boiling down the sap of maple trees. Pancake syrup, often called table syrup, is a sweet syrup made from sugars such as corn syrup and flavored to taste like maple. Both have a place in the kitchen, and knowing the difference helps you pick the right bottle for your budget and your recipe.

Ingredients and labels

Pure maple syrup should list only maple syrup on the ingredient panel. Pancake and table syrups list sugars such as corn syrup or sugar syrup, plus flavorings and sometimes butter flavor or thickeners. Brands use words like 'original,' 'butter rich,' 'lite' or 'sugar free' to describe different recipes. Lite and sugar-free versions reduce sugar and calories, so compare the nutrition panels if you are watching either.

Taste and texture

Pancake syrup is thick, smooth and very sweet with a consistent flavor that many people grew up with. Pure maple syrup is thinner and has a more complex flavor that ranges from delicate to robust, depending on its grade and color. Kids often prefer the familiar thick table syrup, while maple fans prefer the real thing on special occasions. There is no wrong answer; it comes down to taste.

Price and storage

Pancake syrup costs much less per ounce, which makes it practical for big family breakfasts. Large bottles are easy to pour and do not need special care; check the label for storage directions after opening. Pure maple syrup should usually be refrigerated after opening to keep it from growing mold, and it is sold in smaller bottles because of its higher price.

Using syrup beyond pancakes

Pancake syrup works well in glazes for baked ham, drizzled over waffles and French toast, or stirred into oatmeal. Use it in baked beans or barbecue sauces when you want sweetness without a strong maple taste. When a recipe specifically calls for pure maple syrup, like many baking and dressing recipes, swapping in table syrup will change the flavor and texture, so use the real thing there.
