How to Marinate Chicken in Italian Dressing

Published 2026-10-30

Italian dressing is one of the easiest marinades you can buy. It already contains oil, vinegar, herbs, garlic and salt, which is basically what a homemade marinade includes. That makes it a great shortcut for juicy grilled, baked or air-fried chicken on busy nights. Here is how long to marinate, how to cook it and a few simple add-ins that make it taste like you spent more time than you did.

How much and how long

Use about 1/2 cup of Italian dressing per pound of chicken. Put the chicken and dressing in a covered dish or sealed bag and refrigerate. Thin cutlets and tenders need only 30 minutes to 2 hours, while bone-in pieces and thighs can go 4 to 8 hours. Avoid marinating more than about a day, because the vinegar can make the surface texture mushy.

Cooking the chicken

Remove the chicken from the marinade and pat off the excess so it browns instead of steaming. Grill over medium-high heat, bake at around 400 F, or air fry until the thickest part reaches 165 F on a meat thermometer. Let it rest for five minutes before slicing so the juices stay in the meat.

Easy flavor upgrades

Stir a spoon of Dijon mustard, a squeeze of lemon, a little honey or a dash of Worcestershire into the dressing before adding the chicken. A pinch of red pepper flakes adds heat, and grated parmesan sprinkled on at the end gives it a restaurant-style finish. Zesty Italian dressings bring more herbs and spice than classic versions.

Food safety

Always marinate in the refrigerator, never on the counter. Throw away any marinade that touched raw chicken, or bring it to a full boil before using it as a sauce. If you want extra dressing to drizzle on the cooked chicken or a salad, set it aside from the bottle before you start marinating.

Other things to marinate

Italian dressing also works well on vegetables for grilling, such as zucchini, bell peppers, onions and mushrooms, which need only 15 to 30 minutes. It is also a quick marinade for pork chops and shrimp; shrimp needs just 15 to 20 minutes.
